The items in the "Adjustments..." menu are greyed out for smart objects. Besides rasterizing a smart object, making adjustments, then converting it back to smart object, what is a more direct way to do this?

Open a smart object in PS CS3. Then go to Image->Adjustments... See the greyed out menu selections?

Depends on what you want to do. Double clicking a smart object opens it, so you can adjust the individual items inside the object. That was not the question. The question was: suppose you want to use Levels on the smart object. You can't do that, because Levels is greyed out if you have selected the object. The answer is to use an adjustment layer, and combine it as a clpping mask if the adjustment should only be on the object.
